"Water" -Commitment to raw materials vol.2-

Where there is good water, there is delicious rice, and it is said that there is delicious sake.

The water of Aizuwakamatsu in the basin is a natural blessing brought about by the snowy mountains.
We go back to Yukawa, which flows just south of the brewery, and use the groundwater from the water veins derived from the mountains upstream on the east side of the basin to brew sake.

The brewed water used for sake brewing has strict standards different from tap water and must be of good quality.
The groundwater is treated to make the soft water softer and more suitable for sake brewing, leaving the minerals necessary for fermentation.
